GRIDIRON GARLIC BEEF WITH ROASTED POTATOES AND SALSA

Serves: 4

INGREDIENTS

1 Genuine Texas Angus Beef™ Coulotte
6 cloves garlic
1/8 cup kosher salt
1 oz beef suet
4 T olive oil
18 red potatoes
1 T fresh chopped Italian parsley
1 tsp fresh chopped thyme
4 tomatoes, diced
1/2 cup diced yellow onion
1/2 cup diced green bell pepper
2 jalapeño or serrano peppers, diced
1/4 cup olive oil
3 T red wine vinegar
Kosher salt and ground black pepper, as needed

DIRECTIONS

Mix salt and garlic together to form a paste. Rub all surfaces of coulotte with the garlic-salt paste. Refrigerate for a minimum of 4 hours. Grill to desired doneness (an internal temperature of 135°F is recommended for medium-rare doneness). Let rest for 15 minutes, uncovered, before slicing across the grain into 1/8-inch slices. To make the potatoes, heat olive oil in pan and season potatoes with salt and black pepper. Place potatoes cut-side down in skillet and cook until tender. Toss cooked potatoes with parsley and thyme. To make the salsa, combine the remaining ingredients and taste for seasoning. Serve salsa and potatoes with sliced coulotte.
