Down-Home Salisbury Steak

1-1/2 lbs Genuine Texas Angus Beef™ ground sirloin
3 T Worcestershire sauce, plus 2 T for sauce
1 egg
1/2 cup saltine crumbs
3 T grated onion and juice grated directly over meat
Salt and freshly ground black pepper, to taste
1 T extra-virgin olive oil
2 T butter
2 medium onions, chopped
1 bay leaf
2 cloves garlic, chopped
2 tsp thyme
2 T all-purpose flour
1-1/2 cups beef stock


Preheat oven to 425°F. Cover a baking sheet with parchment paper. Put the meat in a bowl and add 3 T of Worcestershire, egg, cracker crumbs, grated onion, and salt and pepper. Mix meat to combine and form into four oval-shaped loaves no more than 1-1/2 inches thick. Arrange them on the baking sheet and drizzle with olive oil. Bake for 20 minutes or until internal temperature of loaves reach 160°F on a meat thermometer. While meat is in oven, melt the butter in a medium skillet over medium heat, then add the onions and bay leaf and season with salt and pepper. Cook for 15 minutes, then add the garlic and thyme and cook for another 3 minutes. Sprinkle in the flour and stir for 1 minute, then whisk in the stock and 2 T Worcestershire. Season liberally with black pepper to taste. Cook for 1 minute to thicken the sauce. Serve gravy over steaks.
