Chipotle Sliders with Fire-Roasted Ketchup

Serves: 6 (2 burgers each)


2 lbs Genuine Texas Angus Beef™ ground sirloin
1 medium onion, peeled and cut in half
2 T Worcestershire sauce
2 chipotles in adobo, plus 2 T adobo sauce
2 T grill seasoning
Extra-virgin olive oil
3 cloves garlic, finely chopped
3 T brown sugar
1/4 cup vinegar
1 can (15 oz) crushed fire-roasted tomatoes
1 T Sriracha sauce
Salt and pepper
12 thick slices sharp Cheddar cheese
12 small round rolls, split


Preheat grill pan to high. Place the meat in a bowl. Grate half the onion into the meat using the small grate on a box grater. Chop and reserve the remaining onion. Add Worcestershire, chipotles, adobo sauce and grill seasoning to meat. Drizzle a little extra-virgin olive oil over the bowl and mix meat. Score the meat into four sections. Make three mini-burgers, each 3 inches wide and 1 inch thick, from each 1/2-pound section of meat, totaling 12 burgers.

To prepare the ketchup, heat a small saucepan over medium. Add 1 T olive oil and garlic. Cook garlic for 2 to 3 minutes then add sugar and vinegar. Cook for 2 minutes and stir in tomatoes. Season with Sriracha sauce and salt and pepper and allow it to reduce for 5 to 6 minutes.

Grill meat for 2 to 3 minutes on each side (or until internal temperature reaches 160°F on a meat thermometer) and top with cheese. When cheese is melted, place burgers on buns and top with raw chopped onions and warm fire-roasted ketchup and serve.
