Sweet 'n' Smoky Texas Brisket

INGREDIENTS

1 Genuine Texas Angus Beef™ Brisket, 7 to 8 lbs

MARINADE INGREDIENTS

1 cup apple cider vinegar
24 oz cola
1 cup soy sauce
2 T liquid smoke
1 cup olive oil
2 T meat tenderizer

MARINADE INSTRUCTIONS

Place the clean, trimmed brisket in a 2-1/2-gallon plastic storage bag or in a non-metal container. Combine marinade ingredients and pour over brisket, making sure to coat the entire surface of the meat. Refrigerate 8 hours or overnight, turning occasionally.

GRILLING INSTRUCTIONS

Heat coals or gas grill to medium-low, about 300F. When the grill is hot, wrap brisket in foil and put on grill, then cover grill. Grill for 7 to 8 hours, turning every 30 minutes, until the meat is tender and reaches an internal temperature of at least 145°F for medium-rare. If deeper browning is desired, unwrap meat and place directly on the grill until desired color is achieved. Remove from heat and allow to rest, covered, for 20 minutes before cutting. Slice the brisket thinly, against the grain. Serve as is or with a favorite barbecue sauce.
