Sweet Onion Baked Brisket


1 Genuine Texas Angus Beef™ Brisket, 7 to 8 lbs
1 sweet onion, thinly sliced
1 cup red wine
Kosher salt and freshly ground black pepper
2 pkgs onion soup mix


Preheat oven to 450°F. Line baking pan with foil. Make a bed of sliced sweet onions in baking pan. Cover onions with red wine. Sprinkle the meaty side of brisket generously with kosher salt and pepper. Turn brisket over and place on top of onions, fat side up. Sprinkle top (fat side) of brisket evenly with dry onion soup mix and more pepper. Place in hot oven, uncovered, and bake 15 minutes. Remove baking pan and cover tightly with foil. Lower heat to 325°F. Return covered pan to oven and bake an additional 7 to 8 hours or until the meat reaches an internal temperature of at least 145°F for medium-rare. Remove pan from oven and let rest, still covered, for 15 minutes. Uncover and let rest an additional 15 minutes before slicing brisket across the grain to serve.
