5 lb Genuine Texas Angus Beef™ Trimmed Brisket
4 tsp coarse kosher salt
1 T golden brown sugar, packed
3 tsp chipotle chili powder
1 tsp paprika
2 tsp ground cumin
2 tsp granulated garlic
2 tsp coarsely ground black pepper
Heavy-duty aluminum foil


Mix all spice ingredients in small bowl then rub spice blend over brisket and refrigerate for one day. Heat oven to 300° F. Arrange brisket, fat side up, in an 11x8-1/2-inch aluminum pan. Cook brisket until center reaches 160° F on a meat thermometer, approximately 2-1/2 to 3 hours. Adjust heat to 250° F and cook for another 3-1/2 hours. Baste brisket occasionally with pan juices. When tender, remove brisket and wrap tightly in 2 wide sheets of heavy-duty foil. Place in clean aluminum pan. Return to 250° F oven until center reaches 190° F, about 1-1/2 hours.
