Prime Rib with Horseradish Rub

4-6 lb boneless Genuine Texas Angus Beef™ Rib Roast

RUB

1/4 cup olive oil
1/3 cup creamy style grated horseradish
1 T kosher salt
1/4 cup chopped garlic
3 T fresh chopped thyme
Cracked pepper (to taste)

DIRECTIONS

Preheat oven to 350° F. Place all ingredients for rub in a food processor and pulse until smooth. Rub mixture over the entire outside of the roast. Place in a roasting pan, fat side up and cook uncovered until it reaches your desired internal temperature, approximately 2-1/2 hours for medium doneness. Let roast rest for 15 minutes before slicing in order to let the juices absorb into the meat.
