Peppercorn Garlic Beef Tenderloin Roast

5-7 lb trimmed Genuine Texas Angus Beef™ Tenderloin Roast


2 pkgs garlic, herb, & wine marinade mix
1-1/2 T coarse ground black pepper
1/2 cup red wine vinegar
1/2 cup water
1/2 cup oil


Mix marinade ingredients in a medium size mixing bowl. Place tenderloin in a shallow dish or large, resealable bag. Pour mixed marinade over tenderloin and coat thoroughly. Refrigerate for 2 hours to overnight. To cook, remove roast from marinade. Cook in a 425° F oven until desired temperature is reached, about 35 minutes for medium doneness. Let roast rest for 10 minutes before slicing in order to let the juices absorb into the meat.
