Herb-Crusted Eye of Round Roast

3½ - 4 lb boneless Genuine Texas Angus Beef™ Eye of Round Roast


¾ cup Dijon mustard
¼ cup red wine
2 white onions, finely minced
6 cloves garlic, crushed
3 T dried rosemary
1 T coarsely ground black pepper 1½ T kosher salt


In a small bowl mix mustard, red wine, onions, garlic, rosemary, pepper and salt together, blending thoroughly. Place roast in an ovenproof pan and spread the seasoning blend over the entire surface of the meat. Place in a 325° F oven and cook for 1½ to 2 hours or until internal temperature of the roast has reached 145° F on a meat thermometer. Let it rest 15 minutes prior to cutting.
