Classic Beef Stroganoff

4 lbs Genuine Texas Angus Beef™ Sirloin Tips (cut into 1¼ inch wide x 2 inch long strips)


¼ lb butter
2 onions, chopped into ¼ inch pieces 2 lbs fresh mushrooms, sliced
4 cups beef broth or stock
½ cup flour
½ cup red wine
1 cup tomato juice
1 pint sour cream
Salt and pepper to taste
Butter noodles or rice


Sauté onions and mushrooms in butter in a large pan until soft, then place onions and mushrooms in a large ovenproof roasting or braising pan. Keep drippings and butter in the sauteé pan. Add beef to the drippings and butter in the sauté pan and brown meat, adding additional butter if needed. Place beef in the roasting pan. Mix beef broth and flour together until smooth. Add the mixture to the sauté pan and deglaze/scrape the drippings into the liquid, stirring until smooth. Add the red wine and tomato juice and stir to mix. Pour sauce mixture over the meat and vegetables in the roasting pan. Cover and roast at 375° F for about 1½ hours until meat is tender and reaches an internal temperature of 145° F on a meat thermometer, stirring halfway through. Remove from oven and mix in sour cream and season to taste. Serve over butter noodles or rice.
