5 lb Genuine Texas Angus Beef™ Trimmed Brisket
4 T olive oil
48 garlic cloves, peeled
2 T sherry vinegar
3 cups chicken broth
3 fresh thyme sprigs
Salt and freshly ground black pepper, to taste


Place brisket in hot pan with olive oil. Brown well on both sides, about 10 minutes. Remove brisket from pan and add garlic cloves. Cook over medium until edges are light brown. Add vinegar and deglaze the pan, scraping up all the browned bits from the bottom. Add broth and thyme and reduce heat to a simmer. Salt and pepper the brisket to taste on all sides, and add it to the pan fat side up. Spoon garlic cloves over meat. Place brisket in a 325° F oven. Cover and cook, basting every half-hour until the meat is fork-tender and has reached an internal temperature of 145° F on a meat thermometer, approximately 3 to 4 hours or longer. Let meat rest for 30 minutes, then slice thinly across the grain. Serve with pan juices.
